I live in Bushwick and none of the Chinese restaurants are open.
Is there a local representative or a congressman I can complain to? Is there a Senator of Ethnic Foods?
Seriously, though, when are they going to open back up? You mofos better be nice to them! They control the entire supply chain for General Tso's chicken with pork fried rice. And those wonton dumplings. And scallion pancakes... Man, I'm hungry.

I figured out how to cook a decent Chinese food dish and I've added it to my rotation the past two weeks. The trick is buying a bottle of premade stir fry sauce at the grocery store. You can usually find it near soy sauce. Start by frying meat or tofu in oil. Then add a chopped vegetable or two. I've been using soft tofu with snow peas and bell pepper. Then add the sauce to the pan with a bit of water and cook for around 5 minutes. You don't want the vegetables to get too soft. Add diced green onions/scallions, a dash of sesame seeds, and serve over rice.
For rice, rinse one cup of dry rice until the water runs clear. This gets rid of excess starch that'll make the rice gummy. Drain as much water as you can and put it in a small pot. Add 1 cups of water and a pinch of salt. Bring rice to a boil. Lower the heat to almost nothing, put a cover on the pot, and cook it for 17 minutes.
I start the rice first, then prep the stir fry, and everything is finished at about the same time.

Pork fried rice is easy, the key ingredient is day old cold white rice, 2 days is better. Look up a recipe and try it. If you dont have a wok you can use a stew pot, or something deep and wide.

The reason for day old cold rice is to let the moisture in the rice leave. That way the rice becomes easier to stir fried and not get all mushed.

it's not exactly the same, but i've been ordering a ton of thai, both because of thai cravings, but also as a sub for chinese food. especially if you order from kind of a mediocre/americanized thai place, their fried rice is pretty interchangeable with a chinese fried rice

So my guilty pleasure is Mexican takeout places run by Chinese people...usually called Fresco Tortilla or some variant. I finally found one after 5 years (due to moving) that made my favorite dish....tex mex chili chimichangas, and like a month later they're closed because of this.
All I want is a chimichanga.

Another reason I can think of is that a majority of the restaurants’ usual dine-in customers are older people as families who are cooking on their own as opposed to ordering takeout. I can’t imagine many of the larger restaurants suddenly pivoting to takeout and finding demand for it. We’ve only been able to order from a few restaurants in my neighborhood.

As with dollar pizza places, Chinese restaurants have low profit margins and are only profitable when they can sell a high volume of food. When the pandemic hit, there was a noticeable decrease in orders & patrons. I’m pretty sure they don’t live in the neighborhoods that they operate in.
Many Chinese takeout places are family owned and family run (ever see teenagers or kids working the register or doing their HW in the shop?) so labor costs are low. Chinese immigrants also live In multigenerational homes with aunts, uncles, cousins, in-laws etc. all together this decreasing the cost of living.

I think they're closed because Asain American businesses, and even more specifically, Chinese American businesses were hit hard by Coronavirus earlier than other businesses. Many stayed away from Chinatown as early as late January and that same behavior was seen all over the city and likely all over the nation. Businesses with thins margins, like many Chinese restaurants could not sustain two or three months of losses.
They, like the rest of us, don't open businesses to lose money. When profits aren't coming in it's sometimes best to shutter the doors and wait for a more fruitful time.

As a Chinese person with a youtube cooking video, I agree. There's a reason why I can only teach easy western meals (like pasta, chicken noodle soup, etc.)... Chinese dishes use an incredible number of ingredients and aren't easy to make.

It’s now been a month since I’ve eaten any Chinese food. I have a day off. It’s nasty out. All I want is a huge mess of Chinese delivery. But every single one in my area is closed and will remain closed until this is all over. And, sure, I’m a chef. I know how to make many of those dishes. But I want the sloppiness. I want the soy sauce packets even though I have a bottle in the kitchen. I want egg drop soup. I want to not use the fried noodles for my soup. I miss my usual delivery guy. A lot of the Thai spots near me in BK are open tho -- not the same but can help satiate noodle cravings in a pinch. Dying for some real dumplings though.

Nothing's wrong with General Tso's chicken. It's just that if you look at the history of Chinese cuisine in America, it was created to appeal to American palates. There's nothing of the sort in China.
Just was saying disappointed in that when people think Chinese food, they think of the Americanized version. A lot of people that eat Americanized Chinese food are very hesitant to go to actual Chinese restaurants and try out the real dishes.
